In an NIH inpatient trial, 20 adults ate an ultra-processed diet and an unprocessed diet for two weeks each, with freedom to eat as much as they wanted. The presented menus were matched for calories, macronutrients, sugar, sodium and fiber, but actual intake differed.
What changed in the trial
On the ultra-processed diet, intake averaged 508 kcal more per day.

What the number means
Matching the nutrition panel did not produce matching intake.
Participants consumed more energy from carbohydrate and fat during the ultra-processed phase. They also ate faster, and weight change closely tracked the difference in energy intake.
Processing level also travels with texture, eating rate, energy density and beverage share. This one trial cannot isolate a single mechanism and call it the cause.
Convenience is real
Giving up convenience is not the only answer.
Frozen meals, bread, cereal and shelf-stable foods can support limited time, budgets and storage. A broad “ultra-processed” label is too blunt to judge every food—or the person eating it.
A more useful view may be eating speed, combinations, frequency and satisfaction. Convenience can stay while the pattern becomes visible.

Processing is not a moral label. It is a doorway into asking why eating patterns change.
